Salsa Chicken

I have been MIA for a while but I have been trying some new things that I want to post...eventually.  Here is an easy recipe I got from a church recipe exchange last week.  My family loved it and I loved that it was quick and I didn't have to go to the store in order to whip this up.  It's a tasty 20 minute meal that I know you'll love.

2 T. Olive Oil
3 chicken breasts cut into bite sized pieces
1 1/2 C. Salsa
Taco Seasoning to taste (maybe 1 1/2 T. or so)
1/2 C. Sour Cream
1 1/2 C. Grated Cheese (I used a colby blend)
3-4 C. Cooked Rice depending on your family size

Heat oil in a skillet and add chicken and taco seasoning.  Saute until chicken is completely cooked.  Add salsa and cook on medium low heat for 3-5 minutes to allow excess moisture to evaporate.  Stir in sour cream.  Spread rice into a 9x13 pan and pour chicken mixture over top.  Sprinkle cheese over chicken and cover pan with a piece of tin foil to melt cheese.  You can also stick under the broiler in your oven if you prefer.  Add a vegetable and your dinner is done!

Orange Rolls

I have never had an orange roll before I made these. I loved them. Perfect for spring! Easy too!


For the dough I just used the sweet dinner roll dough from this site.

Filling

2 TBS melted butter
1 cup sugar
2 oranges zested


Glaze

Juice from the 2 oranges
1 1/2 cups powdered sugar


Roll dough into a rectangle. Melt butter and spread over rectangle. Mix sugar and orange zest in a bowl. Sprinkle all over the top of the butter. Roll up length wise and cut using string. Place on baking sheet and bake at 350 for 20-25 minutes. Mix glaze and pour over top of each roll while still warm.

Beth's Whole Wheat Chocolate Chip Cookies

I love these cookies! I remember having them at Beth's house and I could not believe that they were 100% whole wheat! I also love that they have oats in them because I love oatmeal cookies. These are now my favorite cookies.


1 1/2 cups whole wheat flour
1 tsp baking soda
10 TBS butter (softened)
1 1/2 cups brown sugar
1 egg
1 tsp vanilla
1 1/2 cups oats
1/2 bag of chocolate chips

Cream sugar and butter. Then add eggs and vanilla and mix well. Add all dry ingredients and mix. Stir chocolate chips in with a wooden spoon. Roll in 1 inch ball and bake @ 350 for 10 minutes.

Fruit Salsa

I was being adventurous and decided to try something new. I was also trying to use my fruit before it went bad. I found this recipe and it was a big hit. It does take time cutting all of the stuff up, but it looks so nice. I didn't have the kiwi so I just left it out. It was still great, but would have looked better with it.


Salsa
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

Chips
10 flour tortillas
cooking spray
cinnamon and sugar mixed together

Mix salsa together and chill. For chips spray on side of tortilla with cooking spray. Cut into wedges and sprinkle with desired amount of cinnamon and sugar mixture. Repeat with all tortillas. Arrange on baking sheet. Bake @ 350 for 8 minutes.

Buttermilk Syrup

This can't be healthy. We went camping with some friends a few years ago and they introduced this recipe to us. We call it candy syrup. It is really good!


1 1/2 cups sugar
1/2 cup butter (I made it once with margarine and it was not the same)
3/4 cup butter milk (I used sour milk)
2 TBS corn syrup
2 tsp vanilla
1 tsp baking soda

Put everything except vanilla and baking soda in a good sized pot. Bring to a boil. Take off heat and add vanilla and baking soda.

*hint* It foams up quite a bit so make sure you use a pot with some room for it to foam.

Crock pot breakfast

We were talking to our friends one day about how nice it would be to put breakfast in the crock pot and wake up to some awesome food. I decided to give it a shot. It was very good. We all really liked it.


1 bag shredded frozen potatoes
2 cups of cheese
1/2 of an onion (diced)
1 lb sausage (cooked and crumbled)
12 eggs
1 cup milk
salt and pepper


Grease crock pot. Layer half of the potatoes, half of the onion, half of the sausage, and half of the cheese. Repeat layers. In a bowl whisk eggs, milk, salt and pepper together. Pour over top of the layers. Cook on low for 8-10 hours.

Orange Julius

I love the blender! One of the best inventions! These are great! I make them when I don't have otter pops. My kids love them.

1 (6oz.) frozen can orange juice concentrate
1 cup milk
1 cup water
1/4 cup sugar
1 tsp vanilla
12 ice cubes

Blend all ingredients together. Enjoy!

crock pot chicken legs

Here is another crock pot recipe. I love using the crock pot! This recipe is great because you use chicken legs. I have made this chicken twice and served it to guests and everyone liked it.


3 1/2 pounds chicken legs
1/4 cup soy sauce
1/4 cup brown sugar
2 garlic cloves (minced)
1 8oz can tomato sauce

Grease inside of crock pot. Place chicken inside. Mix all ingredients in separate bowl and pour over the top of chicken. Cook on low 6-8 hours.
